NPR interviewed the sound designers about the same time the NYT article came out.

They played clips of the various sound elements as recorded in the field (literally, in the case of the cannon shots) and then clips of the finished soundtrack with the different sounds edited together. The team used very few "stock" recordings.

As a long-time POB fan, I was very happy with the film.
