For me it's "The Living Daylights" That wcene where they're fighting while careening down the side of the Rock of Gibralter knocks me out every time. Particularly when Bond calls in from the boat and says, "Double 07, I'll report in an hour". And when he sees the expression on the woman's face and the proffered glass of champagne, "Make that two".

Being chased and then skiing off of the cliff.I remeber watching this one in the theater and actually wondering how's he going to get out of this one. Then the parachute opened and the "007" theme music started playing. Still my favorite Bond opening to this day.
