Just about everything than comes to mind has been covered in the other posts.

I would add Last of the Mohicans; Black Robe (MUCH better than Dances With Kostner IMO); Zulu; Apocalypto.

Master and Commander? This movie was boring to me, but Russell Crowe did a fine job.
