Use two amps, a 5.1 speaker set up, and an additional pair of stereos.
One good stereo amp wired as normal to the additional stereos then take the tape/monitor loop output to a seperate AV amp input. Switch the speaker off on system one, and on for system two. Do not connect any speaker to both amps.

Best of bnoth world! But expensive.
