need help with audio ouput from a dvd

I just got a new DVD player and for the audio output it says choose either pcm or bitstream, and if i do choose bitstream what level, the choices are up to 48khz, up to 96 and up to 192. the other choice is pcm. i have an onkyo 501 using a coaxial cable for the audio. I have no idea what pcm or bitstream means. any help would be appreciated.
