I am hoping to setup three rooms with stereo sound using one set of sources. I was thinking I might be able to accomplish this cheaply using a 6.1 receiver and some remote volume knobs (Paradigm makes some good quality ones).I do remember hearing that some of them do not push full range (20-20,000) to the surround channels though, and also that some of them do not offer a *mode* where stereo signals can be sent to all surrounds.
Any advice appreciated - I know very little about Home Theatre.

It would actual take some effort to limit one to that. More likely what you hear is that the surround content (DVD, etc) typically covers less than that. In fact I believe the THX standard specically limits it. If that is the case it most likely done by digital filters.
For what it is worth there is surprising little content (music or movies) over 8kHz.
Check out the Harmon Kardon AVR Receivers (My son has the 235) He has a 7.1 setup, and I know he can set it so that all 7 speakers output the same stereo signal (cool for dancin round the room). I am asumming all speakers can be set for "large", which would be full range.There are probably a quite few different brands that will do this.
