Yup. You can do it but you really need level control since adjusting the distances to be nearer/farther than the L or R speaker will also affect the arrival/timing of the signals.Also, using more than one speaker per channel will result in interference between them depending on (a) the plane of the separation, (b) the distance of the separation and (c) the frequencies reproduced.
By all means, try it but also consider a 'phantom' center as well as a single center above (aimed down) or below (aimed up).
Follow Ups:
Using two center channel speakers can easily cause "lobing" effects that can muddle the sound of the center channel, exactly the opposite of what you are trying to achive. From the gitgo the THX people whav been against this.
