Here is the normal quality levels from lowest to highest
- Composite (single cable with RCA type connectors)
- S-Video (single cable with din connectors)
- Component (3 separate cables normally with RCA)
The gap between composite to S-video is supposedly much larger than from S-Video to Component. On a 27" set, just use S-Video...it's doubtful (but not impossible) you'll see any benefit going to component. There are other types as well (not listed above).

... the better quality the software, the better the final result with component connection - colours are richer and the picture crisper. It helps bigger screens to get closer to film quality.John
