Best chili I ever had.

Ok, I use a recipe from Consumer Reports as a guide. Spices are: Cumin, Oregano, Paprika, Chili Powder. I won't give my secret proportions, eat your hearts out.

Tomatoes: canned whole tomatoes cut up and mashed. Chili beans:
thoroughly drained and rinsed to get out the gooey crud in the cans. Proportions are propriatary. Experimentation is cookery.

Red, green and yellow peppers, frozen ok. Use lots, about as much as the onions or celery.

Start with sauteing 2 or three fine cut onions in a bit of olive oil. Add a couple or 3 of celery stalks, peeled and cut fine. Add peppers. Add lots of garlic cut small. Add the garlic last and don't saute it too long, or it will be too strong.

Add tomatoes and spices and heat. Add beans and cook at least 30 minutes. Maybe add a bit or two of Cumin and Oregano later, depending on aroma. Final touch is 1 or 2 tablespoons of catsup. Ok, I use Heinz. Tribute to Sen. Kerry?

BTW, no meat--I'm a vegetarian.
