I watched several of her films over the past week or so:
Cold Comfort Farm--Didn't like that one as much as I expected to. Mildly amusing in spots but just didn't mesh with my sense of humor. Wish Ian McKellen would have had a larger role because he did make me laugh.
Shooting Fish--I liked this comedy. The sort of plot you just have to accept and go along for the ride with if you're going to enjoy the film.
Brokedown Palace--Troubles in Thailand. Not great but interesting enough for me to hang in for the duration. Co-stars Claire Danes, and Bill Pullman's(underrated actor, IMHO) performance is good.
Serendipity--Romantic comedy co-starring John Cusack. I have to be in the mood for this kind of thing, and I was. Didn't hurt that Kate is getting prettier as she adds a few years.
Underworld--Got bad reviews but I thought it was a pretty good action film. I thought Beckinsale was odd casting going in, but she convinced me quickly enough. Didn't hurt that even undead Kate is getting prettier as she adds a few years.

Some people might find her acting bland, but she just seems low-key to me.
