Not being familiar with your components I can only answer in general terms.I suspect your TV has S Video in, not out (unless your TV has video switching circuitry inside - does it have a "video 1", "video 2" etc?). S video is the better source of quality video than composite (RCA connector). It should thus be used wherever possible for the best video and your DVD player should be the best source. Similarly the digital out of your cable box and DVD player will offer the best sound and is the only way you will hear DD 5.1 sound from these sources.
Does your receiver have more than one S video and digital input? If so connect your DVD player to one of these and your cable box to another. Then take the s video out of the receiver to the s video in of your TV. The video will automatically switch with the audio as you switch the different inputs of your receiver.
Now if your receiver does not have S video inputs then you are stuck with composite video (the RCA connector) so will take composite video out of the receiver to the composite in of the TV.
For special high quality vision you will then have to manually connect the s video out of either your DVD player or cable box direct to the TV (bypassing the receiver) but will still use the receiver for the audio.
The DD 5.1 digital audio will go in your receiver to its processor and then out to the appropriate speakers. Ignore the audio connection to your TV as you do not want sound to come from it, you want the sound to come out of the speakers connected to your receiver.
