First non-Living room Theater, Help

I'm building a Theater / Gameroom at the Ranch, looking for suggestions for Speakers & Separates to fill out the room. It's been a few years since I've looked into what people are recommending now. I plan to rip off parts of my current setup for spare parts. I have a vmps larger sub & two amps a Rotel 1095 to drive 5 speakers and a NHT sa-3 to drive the sub. The SA-3 gives me enough power to drive the vmps in my current 18x 20 non vaulted room but I doubt it will be sufficient in the new room (we'll see). I'm used to the accurate sound & decent stage of NHT VT-2s & NHT Dipoles at the sides. The NHTs will stay at the old location where believe it or not my wife now loves the look of them and has requested they stay ;-)
I'm thinking I need a good set of towers for the front left right, balanced center, and 4-6 surrounds tone balanced with the mains. Or do I look for dipoles at the side and rear for diffuse sound? I plan to spend 6-7k for DLP & Screen, 4-5k for the Separates, Sources, Amps, Tuners, Decoder, etc. Material will be Movies, Sports & TV, occasional music. Decor is Rustic / Texas Ranch. Prime seating will be ~15' back from screen though all locations in the room will be used.
