true 5.1 surround sound

If I send sound from my DVD player to my plasma with Analog cables, then output using analog cables to my receiver am I getting a true surround sound like dolby 5.1? Same for my satellite reciever, it goes to my plasma with an HDMI cord, then can I output it with analog calbes and get true surround sound?? I was told that unless I carry the sound with a digital cord (Coax or OPT) I am not getting a true surround sound, is this true?
