OFF TOPIC - multi-room on the cheap with AV Receiver?

I am hoping to setup three rooms with stereo sound using one set of sources. I was thinking I might be able to accomplish this cheaply using a 6.1 receiver and some remote volume knobs (Paradigm makes some good quality ones).
I do remember hearing that some of them do not push full range (20-20,000) to the surround channels though, and also that some of them do not offer a *mode* where stereo signals can be sent to all surrounds.
Any advice appreciated - I know very little about Home Theatre.
