Stick to 5 ch. but use the 2 subs

Unless his main stereo pair has power handling problems I see no point in doubling up on them but there is point in 2 subs, provided he is prepared to spend some time experimenting with their position (generally NOT in a corner). Note that the center channel will often demand more power than either left or right.
