You should experiment with the composite cable as it all depends on the comb filter in the player and the comb filter in the display device. On my own setup (Pioneer CLD-79 and SONY RP CRT) the composite produces a slightly (slightly) better picture. I verified this by hooking up both cables to different video inputs and analyzing still frames. So you can't just assume that "S" will always produce a better result.
