The option you select in the menu is what you'll get on the digital out. If you select 2.0, you'll get the 2 channels of audio that's recorded on the disc sent to your receiver. If you select 5.1, then you'll get the surround mix that's recorded on the disc.

If you have options in the DVD menu for 2.0 or 5.1, these selections are dedicated tracks. Many concert DVDs actually use an uncompressed 2-channel PCM track for the 2.0 track, rather than 2 channels of lossy compressed Dolby Digital at 192kb/s. That's not always the case, but better fidelity/quality would be my first choice when available. Movie DVDs are not going to give you 2 channels of PCM on the disc (for the 2.0 track), but may give you better sound than the downmix from the 5.1 track. The reason is that most DVD players don't use the .1/LFE channel when downmixing for a 2-channel output.
