HDMI better video than DVI?

Rookie question:

Can I use HDMI cable between my DVD player and T.V., and analog output cable from my DVD player to the stereo, simultaneously (muting sound from the T.V.), or should I just use DVI cable and analog output cable?

As far as I know, HDMI is only different in that it also carries sound, but does not provide superior digital video than DVI. Is this correct?
