Have you looked at the switchers at www.markertek.com?, With out a syncronized switcher, the best you can do is a vertical interval switcher, which they have many to choose from. I am not aware of TV's that auto switch, or detect. If the switcher you pick supports both s/video and composite, it will have to have the neccessary electronics, which shouldn't effect the quality much. Maybe a matrix switcher is more of what you are looking for. Now, with the matrix you can assign any input of say 4 inputs to any of 4 outputs and visa versa. Inputs & outputs can be s/video or composite, say 2 for 2. That way all s will go to an s output, and composite to composite, with out noisy electronics, just switching. Go to the markertek homepage and search matrix switchers. Hope this helps.
