I believe the Star Wars movies are shot in "Vista Vision" which is a 1.85:1 format. However, what I don't understand is your comment

"My memory of seeing it in the theater was that its natural aspect was closer to 1.85:1, and indeed I do see that the bottom and top of facial closeups and other scenes on the DVD, are missing!"

2.35:1 and 1.85:1 film formats have the same frame height - it is the width that is different. Perhaps your DVD player or display is rescaling the image?
