I guess in Roddenberry's Star Trek universe, humans aren't the only semi intelligent bipeds warping about the galaxy.
If we stick to the ST movies here is a short list:
Vulcan
Romulan (Vulcan relative)
Cardassian
Forengi
Klingon
Borg
just to name a few of the more frequently encountered aliens. But there are dozens more. I kind of liked the character Odo in the Deep Space Nine series. Species: Founder Changeling. An interesting shape shifter who's natural state resembled that of an oozing puddle of tar.
re: Dr. Spock
I guess you'd have to be old enough to remember that baby doctor; Dr. Spock. A prominent media personality circa 1950's and 1960's. Definitely, he's not a Vulcan. IIRC, Roddenberry deliberately borrowed the name Spock for his Vulcan character from the famous baby doctor.
