Just hook it up via HDMI and the composite/audio hook-up cable (the one that comes with the PS3). Set your projector to the composite input and navigate the PS3's menu to the Display Settings. Once there, tell it you want to use HDMI as the video output (this may or may not be the audio output as well, as it depends on your system). It will then ask you what resolutions your display is capable of accepting (480p, 720p, 1080i and 1080p are the choices -- select all that apply). After you set up the video, it will prompt you to do the same for the audio.
Follow Ups:
Where on the PS3 do you let it know you have a 4:3 display versus a 16:9 display? Never could find it on the menus when I look. There is a setting for pan and scan or letterbox but I don't see an option for display type.
If you're outputting at higher resolution, the PS3 just assumes your display is 16x9 but at 480 you have the option of choosing 4:3.
