I want to use my analog 2 channel audio system with a Sony XR55AJ80 OLED widescreen. Will one of the digital to audio converters from Amazon that use a Toslink optical cable make an acceptable audio connection. I've always used my 2 channel audio system with video in the past and don't feel the need or have the space for surround sound.

You can use one of the digital to analog converters from Amazon, to convert the optical out from the TV to your two channel system.
If you play a disc in your bluray with HDMI going to The TV, you will still be able to get the audio back from the TV to the two channel system.
The audio will not be 5.1 or 4k just stereo. Also make sure to set the optical audio output to PCM in the TV settings, or else the converter may not convert it.

That will work. I can't comment on brands.
However, I have a Sony OLED, and use the ARC HDMI in/out to my Oppo 103 (ARC) player, and then the analog out of the Oppo to my TV. It's unfortunate that most TVs made in the last 5-10 years or so no longer have analog out.

I have a Pioneer BDP-23FD Blu Ray player that I tried to use. It will play the disc through the Sony widescreen but a window related to set-up would not respond to my efforts to remove it. It won't play 4K definition either.
Is the setup screen a Pioneer or Sony setup screen and are you saying that the Sony will not upscale the Pioneer's video to 4k?I would try three things:
1. Make sure both the Pioneer and the Sony have the latest firmware installed.
2. Try a different HDMI cable for the Pioneer and/or move it to a different HDMI input on the Sony.
3. Perform a factory reset on the Pioneer.

It was a Pioneer set up screen which I discovered when I moved it into the bedroom to to with my widescreen there. I bought a new Sony Blu Ray player to go with the Sony widescreen for the 4K feature. Now I can play Blu Ray discs in both rooms. Just waiting for the the digital to 2 channel analog audio converter to arrive on Sunday now.
