Via component output, all High Definition players are limited to 720p/1080i for movie playback. Even though what's on the disc is 1080p, AACS (the copy protection system) limits the analog output resolution. If you want 1080p for movies, HDMI is the only way to go. However, if you play games on the PS3, you will not have this restriction (1080p output via component is available for games).
Firmware version for the PS3 is now 1.82, but 1080p output has been available since Day 1.
To setup the HDMI output, use Settings > Video Output Settings > HDMI > Custom. In the Custom menu, check off all of the resolutions (480p, 720p, 1080i and 1080p). When playing a Blu-ray movie, your Sharp should show 1080p or 1080p60. If you don't get a picture, there is a problem between the PS3 and the Sharp (usually an HDMI handshake issue).
Are you sure your Sharp accepts a 1080p signal? Sharp is one of the manufacturers who, for several years, marketed their displays as 1080p: the catch was that they could not accept a 1080p signal (they didn't want to spend the extra $3.50 for the HDMI receiver chip that was 1080p capable). If you have one of these displays, go back to the Custom screen and unselect 1080p. The PS3 will then output 1080i and the Sharp will deinterlace for 1080p unless there is an HDMI/HDCP issue.
