Both can give good results; I haven't been "wow"ed by the differences between Component and DVI

in my system (YMMV). At least not "wow"ed enough to bother with a HDMI/DVI switcher. Currently I'm running component video from Dishnetwork HD tuner to the 720p FP and running DVI from the LG combo player (via HDMI/DVI adapter). Yes, your Dish HD tuner should support HDMI output. In an ideal world you'd experiment with both to see what works best for you. Typically, DVI or HDMI should be better, but I haven't seen it yet in practice. The caveat is I spent a heck of a lot more money on my component cable than my generic 50 ft DVI cable.

And if I were starting all over again with HT, I'd opt for a 1080p FP. I'm just not willing yet to toss out a huge investment in my current 720p FP to toss that one out and make another huge investment in a 1080p FP.
