Both of my kids have televisions with optical outputs. They're configurable: Off, Dolby Digital and PCM (the latter is 2-channel).

Even if your television doesn't have a 2-channel option for optical, monoprice sells an HDMI de-embedder that has a 5.1/2.0 switch. Since it can strip out the audio from the HDMI stream and output via optical or coax, it's an option for under $45 (or less if you can find one used).
