DVDs have been released with 7 channels. DTS-ES 6.1 Discrete soundtracks contain 7 independent (non-matrixed) channels.
CableTV (digital) contains up to 6 channels using Dolby Digital 5.1 audio. Usually, there are only 2 channels in use.
It may be better to say that delivery mediums contain "up to" x amount of channels, as they may contain less than the maximum supported.
