First, Jack was clearly cruising the guy. Then remember later when Jack's parents revealed that he had said he intended to bring a buddy up to clean up the ranch? Well...Plus the original story IIRC is somewhat more specific.

*Jack was clearly cruising the guy*I thought this was left ambiguous. No dialog between the two indicated Jack was cruising the guy. I remember the conversation being mundane, where Jack was even complaining about why wives always take a powder when they arrive and when they leave a place. I haven't read the story but the screenplay didn't hint at any physical feelings Jack had for this guy.

I thought the parents were recalling Jack's ruminations about Ennis and the plans he had with Ennis in mind. I felt the parents telling this to Ennis was a good way to get a bittersweet moment.
Maybe not.
