3/2 is Dolby Digital 5.1.... PCM will be your stereo output.You should spend time with the Avia or Video Essentials and an SPL meter to correctly set the output levels of each channel.... this way you will get the 'correct' output for music and surround based on how the DVD was mixed. In surround, music is sometimes only part of it, the center channel is very important and the rear channels are not as heavily utilized but for special Fx (typically).
Also, look at your amp specs.... Sony typically has higher output in stereo mode than surround (like 120W/ch in stereo vs 100W/ch surround).
Surround sound is a very different beast than stereo...
