As to what you might be missing, I'd say not a lot. Yes there is an improvement from s-video to component but it is not nearly as great as from composite to s-video. As with most software in audio as well as video and across a variety of formats, the quality varies a lot so there would be few which would significantly benefit from being fed in composite. So relax and enjoy your new toy :-)
