Except for the $2000 list Denon DVD5900 DVD player and the $1600 list Pioneer DV-59i, you're not going to get a DVD player with a built-in decoder that also gives you a DVI-HDCP output. If that's what you want, either player should do nicely.Right now, the under $300 DVI DVD player options are limited. You may want to see what's going to be offered in Q1 2004. If you can't wait, there's the Bravo D1 from VInc and the HD931 from Samsung. There are also a few others, like the Momitsu V880 and a new LiteOn model with a DVI output. You can do a search for all of these players in the DVD Hardware section at www.avsforum.com to see what others think of them.
You didn't mention anything about price, so I'll just recommend Denon for the processing function, should you choose to go this route. Actually, starting with the AVR2803 and working your way up, take a look at their receivers. They have preamp outputs and decode just about every format that's available for DVD movies (DTS ES 6.1, DTS 5.1, Dolby Digital EX 5.1, Dolby Digital 5.1, Dolby Pro-Logic II, etc). They start off at $799 list. You can see them here:

You need a DVI-D male to DVI-D male cable. The Pacific Cable model is only $16 for the 1m/3ft version (DVISL-1). Other lengths are available, but keep it less than 5m/16ft.
Follow Ups:
Joe,I'm looking closely at the panny 42 inch ED plasma with the DVI, but how would you hook-up two DVI sources, i.e. DVD and cable set-top box (assuming this included a DVI out)? Some sort of switch-box???
There are a few DVI-HDCP switchers available or soon to be available. The price ranges from $200 to $400+ depending on the brand and how many sources you want to be able to switch (2 sources or 4 sources).Whichever one you decide on, should you decide to get one, make sure it is HDCP compliant. If it's not, it may soon be worthless -- regardless of price.
These boxes are or will soon be available from Gefen and Pacific Cable, among others. Another possible option, though it may not be available for a few months, is an STB with a DVI input. Some of Samsung's STBs have firewire input capability, so DVI input capability shouldn't be far off.
One small problem with any switcher. The levels coming off the sources may not match. Then, if you calibrate your display, you need to be sure that the DVI signals conform to the same standards. There's the digital video standard (CCIR 601, 16 - 235 from black to white, allows for below black and above white) and the digital PC standard (0 - 255 for black to white, no below bkack and no above white).
Here are a few DVI switchers:
