The majority of HD DVD and Blu-ray players will work with DVD and CD media. A few players do not list CD playback, but it remains to be seen if they will or won't actually support CD media in production models.
As for SACD, I've only seen the Sony PS3 list SACD playback. Whether or not others include SACD playback is solely up to each manufacturer. If they believe it will sell more players, they will include it. Also, just because a format is not present in a manufacturer's 1st gen player doesn't necessarily mean its 2nd gen player won't include support.
