I've got an old pre-amp, early 90's. I'm about to purchase a plasma tv, Panasonic TH50PX60U, and was wondering how much I will be losing in picture and sound quality by using RCA cables. The new set has HDMI.I am a total newbie in this stuff.
I'm not interested in going with more than two-channels.

RCA cables will work fine for audio. Video cables require a 75 ohm impedence. For good cables @ reasonable prices, without the snake oil & misinformation available on Cable Forum, try Blue Jeans Cable.
