The menu on my Technics A-10 has a screen for speakers and turns on or off each channel and whether the mains are big or little. Also it has an additional feature in a different menu that lets me emphasize the center channel material via the two main channels. (so spoken dialog is not drowned out by effects, really useful late at night when I want to watch a movie quietly) It has the 6 separate outs but also two sets of 2-channel outs that work at all times, so I can plug in the the TV audio direct and have two channels to the stereo.
One comment about any DVD player: if you thought the clock on a VCR was a hard thing, DVD menus are way WAY more confusing!!! read the manual at LEAST a couple of times to know all the features and options

Elizabeth,Your Panasonic has DD/DTS built-in, not all DVD players come that way.
Many only come with a digital output (coax or optical or both) and a L&R analog output.
But you are still correct in that many players will still let you hook up and use both outputs (some may require DVD player menu changes to use either output and some don't).
